I would like to put some text in some of the blank boxes (the ones without a date/number). Is this possible?

The only way this is possible is to use the "Extra Text" feature.

I can not seem to put anything in there. When I try to enter extra text, it opens up the month & year. I want to put something in a blank space. Such as January 2016, in the first week Sunday thru Thursday does not have a date in it because the first of January is on a Friday. I want to put text in those days Sunday - Thursday. Is this possible.

Understand what you are wanting to do.
Short answer is no, there is no specific feature to add text to those empty squares.
However you can add up to 2 "extra text" blocks and manually position those blocks within the empty squares.
Or if you are really keen to have this feature, print the (almost finished) calendar to PDF. You can then open the calendar directly in latest version of MS Word or use "Solid PDF to Word" to convert to Word docx format. You can then use MS Word to add extra text.
